Não sou fã de suspiros. Arriscaria dizer que nunca fui, mas deixa a memória de lado caso ela queira me passar a perna. Tenho um lindo livro chamado 500 cupcakes & muffins, presente de uma querida amiga que me inspira para cupcakes. Tirei esta receita dele. Estes cupcakes ficam muito legais prontos, pois os suspiros ficam show.
Ingredientes:
Para os cupcakes:
- 225g manteiga sem sal em temperatura ambiente
- 225g açúcar
- 225g farinha de trigo com fermento
- Raspa de um limão Tahiti
- 4 ovos
- 1 colher chá extrato de baunilha
Para o recheio:
- 75ml suco de limão Tahiti
- 400g leite condensado
Para o suspiro:
- 3 claras
- ¼ cremor tártaro
- 75g açúcar granulado
Preparo:
Pré-aqueça o forno – 175oc. Prepare 18 forminhas de muffin: forre com as forminhas de papel.Reserve.
Coloque todos os ingredientes numa tigela e bata tudo por uns 2 ou 3 minutos. Não mais do que isso. Gosto de dar 2 minutos marcadinhos e faço um minuto extra no muque se necessário. Mais que 3 minutos pode virar uma massa pesada. Espalhe a massa pelas forminhas e leve ao forno por 22 minutos. Teste, e se necessário asse por mais uns 2 minutos. O resultado final tem que resultar em um palito limpinho. Deixe esfriar um pouco ainda na assadeira e transfira para uma grelha para acabar de esfriar.
Prepare o recheio misturando o suco de limão ao leite condensado. Confesso que da minha parte fiz uns ajustes pois o resultado final tem que ser bem com sabor de limão. Mas não esqueça que a mistura não pode ficar líquida e sim cremosa, pois você não vai querer encharcar o cupcake. A mistura deve ficar firme e com sabor forte de limão. Assim que os cupcakes esfriarem, faça um buraco no centro – uso um dos instrumentos que usamos para tirar bolas de melão, e recheie com a mistura de limão e leite condensado.
Suba a temperatura do forno para 230oC. Prepare o suspiro batendo as claras com o cremor tártaro até ficar com picos macios. Despeje 1/3 de açúcar e continue a bater por mais um minuto. Coloque mais açúcar e bata. Repita os passos até colocar todo o açúcar na mistura. O resultado final será uma mistura firme, mas não dura. Coloque o suspiro nos cupcakes usando uma colher ou saco de confeiteiro. Leve os cupcakes ao forno por 5 minutos ou até dourarem. Retire e sirva. Esta é uma mistura de fazer e se consumir no mesmo dia.

I am not a fan of meringues. I don’t know if I have ever been. I just cannot see what the fuss is all about. However, as I love baking and always think of other people i I cannot ignore the effect that meringue have on others. This is how I chose this recipe. It is from a book entitled 500 cupcakes & muffins which I got from a very good friend. It had a fun meringue top and sinful lime mixture. The end result is a fun cupcake.
Ingredients:
For the cupcakes:
- 225g unsalted butter, room temperature
- 225g sugar
- 225g self raising flour
- rind of 1 lime
- 4 eggs
- 1 teaspoon vanilla extract
For the filling:
- 75ml lime juice
- 400g condensed milk
For the meringue:
- 3 egg whites
- ¼ cream of tartar
- 75g granulated sugar
Preparation:
Pre-heat oven to 175oC. Line 18 cupcake tins – I use muffin tin.
Put all the cupcake ingredients to a bowl and beat it all together for 2-3 minutes. No longer than that otherwise you will end up with tough dough. I tend to do 2 minutes with the help of an electric mixer, and I do the extra minute myself, by hand. Transfer the mixture to the cupcake cases. Bake in the oven for an initial 20 minutes and then check it with a toothpick. I have felt that often we need to bake it for another few minutes. Remove from the oven and leave it to cool in the tin before transferring to a rack. Set the temperature to 230oC. In the meantime mix the condensed milk with the lime juice. You want the final result to be not too sharp or too sweet. You might have to pay a bit with the amounts. Just avoid watery mixtures. Reserve. Beat the egg whites and then pipe/spoon it on the cupcakes. Take it back into the oven for 5 minutes or until the meringues are golden.
